Molasses, blackstrap molasses is a product obtained as a result of the sugar extraction process from sugar cane. It is also known as cane syrup or cane sugar.

Chemical composition

Molasses contains the following substances:

  • sugars (about 20%), mainly sucrose, as well as glucose and fructose;
  • minerals (about 9%), including potassium, calcium, magnesium, iron, phosphorus, and sulfur;
  • organic acids (0.4%), including citric and tartaric acids;
  • proteins (about 10%);
  • vitamins, including thiamine, riboflavin, niacin (nicotinic acid), and vitamin B6.

Applications

Molasses is used in the food industry as a sweetener, and also in the production of alcoholic beverages such as rum, to impart its characteristic flavor and color.

In cooking, molasses can be used as a sugar substitute, as well as for preparing various sauces and syrups.
