Goose liver is an offal product obtained during the slaughter of domestic geese. It has a dark brown color, a firm yet tender texture, a smooth surface and is covered by a thin pale membrane.

Goose liver contains many beneficial substances, such as vitamins (A, D, E, K, B group), minerals (iron, zinc, copper, selenium, sodium, magnesium, calcium, phosphorus, potassium), fatty acids, proteins and amino acids.

Per 100 grams of goose liver:

  • Carbohydrates — 5.1 g.

Goose liver can be prepared in various ways: fried, stewed, baked, pâtés, pâté-spread, filling for pies and pancakes.

However, it should be remembered that goose liver contains a large amount of fat, therefore it is not recommended for people with gastrointestinal tract diseases, liver and pancreas to consume in large quantities. Also note that geese are often carriers of parasites, so the liver should be thoroughly cooked.
