Category 2 Chicken — these are chicken carcasses with the following characteristics:

  • Appearance: skin — light with a pinkish hue, may have a small amount of tears not longer than 1 cm;
  • Muscle tissue: developed satisfactorily;
  • Keel: there is stiffness, but not strongly expressed (the keel may be slightly curved);
  • Shape and position: muscles are underdeveloped;
  • Color and texture: the muscles are firm, elastic, the surface of the muscle tissue slightly moist;
  • Smell: characteristic of fresh chicken meat.

Category 2 chicken has lower quality indicators compared to Category 1. In carcasses there may be remnants of feathers and down, sometimes bone fractures may occur, sometimes there are bruises and dents, as well as occasional scratches.

On average, Category 2 chicken weighs from 800 g to 1.5 kg.

Category 2 chicken can be used for preparing a variety of dishes, but it is most often used for making broths, since it has tougher meat.
